Day 144: Tangerine Oatmeal Cookies

Yield: 2 dozen cookies
Time (Start to Finish): 1 hour

Ingredients:
½ cup butter
1 cup brown sugar
1 egg
1 tsp vanilla
¾ cup flour
¼ tsp baking powder
1 tsp cinnamon
½ tsp salt
1 ½ cup rolled oats
½ cup walnuts, chopped
3 tangerines, zested, and juiced separately

1 cup powdered sugar

Directions:
1. Take the butter and the sugar and blend in a mixer until smooth and fluffy
2. Add the egg and mix and then the vanilla
3. Add the flour, baking powdered, cinnamon, salt, oats and mix until combined.
4. Add the tangerine zest and walnuts and let sit in fridge for 10 min
5. Preheat oven to 350F
6. Scoop 1 inch balls onto the cookie sheet and bake for 15 min until brown. They spread a tad but feel free to press down a little before baking
7. In a bowl sift the powdered sugar. Add the tangerine juice to it. You want it to be thick put pourable frosting, so play with the powdered sugar ratio and add more juice or sugar to make it the right consistency and drizzle over the cookies when they are cool

Rating: 4.5 strawberries
Notes: This is a play on Edie’s orange oatmeal cookies, and let me tell you, they rule. They are soft, chewy, and perfect! The orange flavor is subtle, but just enough for you to be able to place the taste. A very nice snack while watch a movie or coming home fro school! You can add pecans too or orange zest instead of tangerine.
