Yield: 2 dozen cookies
Time (Start to Finish): 45 min
Ingredients:
¼ cup shortening
¼ cup creamy peanut butter
¾ cup gran sugar
1 ¾ cup flour
1 egg
½ tsp baking powder
½ tsp salt
½ tsp vanilla
sugar
cinnamon
Directions:
1. Preheat oven to 350F
2. Mix the shortening and the peanut butter until smooth
3. Add the sugar and then the egg and vanilla
4. Add the flour, baking powder, salt and blend until it is combined
5. In a bowl, combine sugar and a few shakes of cinnamon to make a mixture you will roll balls of the dough in
6. With your hands, roll the dough into 1 inch balls and then roll in the sugar mixture and place on the cookie sheet. They will spread, so give them a little room
7. Bake for 10-15 min until they are cooked and barely brown in the bottom. Don’t overbake! Underbaking is always better

Notes: These turned out so wonderful! I made them and then suddenly got invited to a dinner party, and they were a hit as dessert. They are quick to make (I cooked them while I was getting ready) and super tasty! The peanut butter is subtle but noticeable, and the cinnamon on the outside adds a perfect touch. Enjoy these!
