Day 290: Minted Whipped Cream

Yield: 1 cup cream
Time (Start to Finish): 5 min

Ingredients:
¾ cup heavy whipping cream
2-3 drops peppermint oil
2 Tbsp sifted powdered sugar

Directions:
1. In a mixer or with a whisk, beat the cream until it begins to get foamy
2. Add the powdered sugar and the mint oil and keep mixing until it reaches stiff peak
3. Serve with cherry apricot pie

Rating: 3.5 strawberries
Notes: This is a nice addition to any dessert. Mint tends to make desserts fresh and light, so serving it with a first of the season summer pie it ideal. You can also put it in hot cocoa in the winter. It is classic. You can try it without powdered sugar if you want something less sweet and more elegant, but I am a sugar fiend. I didn’t give it a high rating because it is so basic, but it really is important to enjoy classic simple treats now and again!
